Peak to Plains Food Distributing is a unique food hub integration of meat processing and produce aggregation, created to realize Mike Callicrate’s vision to Save Our Interdependent Livelihoods (SOIL). The fundamental idea is and has always been to raise the level of income at the farm and ranch gate by eliminating intermediaries that have extracted an ever higher proportion of the consumer’s retail dollar.

The original concept involved mobile slaughter units to enable small farms and ranches to avoid standing in never-ending lines at the dwindling number of USDA slaughter facilities. Transport capabilities would – and now are – used to bring produce from the farm, along with the protein.

Callicrate Beef® is raised and processed in St. Francis, Kansas. Slaughtered there, it’s returned to Colorado Springs for processing on a backhaul we do from food distribution to northeast Colorado customers.

We have cut meat for a number of local producers and are planning to locate a mobile slaughter unit in southeastern Colorado to offer local farms and ranches a capability that is ever less accessible in an increasingly concentrated food system.

Our Mission is to stimulate food production in southeastern Colorado by connecting producers and eaters, returning as much income as possible to the farm and ranch gate.

• Promoting local production to Peak to Plains customers and into the Ranch Foods Direct stores.

• Providing transportation service at reasonable rates, particularly backhauls.
